Bacon Wrapped Onion Bombs

Ingredients

  • 1lb. ground beef
  • 1 cup shredded white cheddar cheese
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 2 Tbsp. Sizzle & Sugar rub (by Circle K Angus Farm)
  • 1egg
  • 1 onion cut in half and peel apart layers, then pair together matching layers (each layer pair makes a ball shape) 

Instructions:

  1. Preheat grill/smoker
  2. Thoroughly mix first six ingredients together in a bowl
  3. Shape meat mixture into medium sized meatballs.  Match the size of the meatball with the onion so that you have a nice snug fit.  
  4. Pair the matching onion halves so that it seals up the meatball nicely. 
  5. Wrap with 3-4 pieces of bacon.
  6. Brush your favorite BBQ sauce and dust with more Sizzle & Sugar rub.
  7. Place them on a tray lined with butcher paper and then into the grill/smoker.
  8. Grill/smoke them for 45 minutes at 350 degrees.  When the sauce starts to candy up, they are ready.
  9.  Let them rest for ten minutes before serving!
