Manicotti: Another Family Favorite

Between sports, farm work, and endless to-dos, the dinner table is where we finally pause.
It’s where stories are told, seconds are served, and love is quietly passed around meals like this one!

Ingredients

  • 1 lb. sausage
  • 1 egg
  • 1 1/2 cup mozzarella cheese (shredded and divided)
  • 1 slice of bread (I use homemade sourdough)
  • splash of milk
  • 1 box of manicotti noodles (I use brown rice noodles)
  • 2 cans of tomato sauce
  • 1 can of diced tomatoes
  • 1 tsp of rosemary garlic seasoning (I use the one from Sam’s club)
  • 1/4 tsp stevia

Instructions:

  1. Preheat oven to 350 degrees
  2. Cook sausage in a skillet. 
  3. Bring 3 quarts of water to boil.  Add the manicotti noodles.  Cook for 4 minutes, then pour noodles into a colander.
  4. Mix first 5 ingredients  together in a bowl. (1 cup mozzarella cheese.)
  5. Mix tomato sauce, diced tomatoes, rosemary garlic seasoning, and stevia together.  Then pour a little sauce in the bottom of a 13X9 dish.  
  6. Once noodles have cooled, stuff each noodle with the sausage mixture filling and place in your baking dish.
  7. Top with the rest of the sauce, covering the noodles completely, and sprinkle cheese on top.  
  8. Bake for 40 minutes.
