Osso Bucco

  • 3 lbs of osso bucco
    3 cups beef broth
    1 cup red cooking wine
    1/4 cup Worcestershire sauce
    1/4 cup balsamic vinegar
    1 Tablespoon tomato paste
    1 Tablespoon olive oil
    1/2 cup diced onion
    1/2 cup diced carrots
    1/2 cup diced celery
    4-5 cloves garlic minced
    1 teaspoon kosher salt
    1 teaspoon black pepper
  1. Preheat smoker or oven to 225
  2. First we salt a pepper the osso bucco shanks then smoke them on the smoker or bake in the oven for 3 hours at 225 degrees.
  3. While they are on the smoker, saute the onion, celery, carrots and minced garlic in the olive oil in a skillet until they are soft.
  4. Mix all of the other ingredients together in a bowl, then add the sauted mixture to the bowl.
  5. When the osso bucco has grilled for 3 hours, place each piece in a pyrex dish, then pour the mixture from the bowl over it, tightly cover the dish with foil and place it back in the smoker or in the oven for 4 more hours on 300 degrees.
  6. When the meat is ready, it will fall off the bone, or very easily break apart.
  7. We serve this over jasmine rice with a side of broccoli or green beans. The meat will melt in your mouth and your taste buds will be exploding with flavor!
